Lance and St. George Spirits are dedicated to producing high quality craft spirits. Their spirits are made with seasonal ingredients, sourced locally whenever possible. Our discussion ranged from how Lance became interested in distilling spirits (he started home brewing when he was an engineer in the Navy) to the process of making spirits to his latest creations. One of these, St. George Terroir Gin, was inspired by the smells Lance encountered while hiking on Marin County’s Mount Tamalpais. The intense woodsy nose and flavor of this place-driven gin are derived from Douglas fir, California bay laurel and California coastal sage. Lance is also working with the folks at Oliveto Restaurant and Cafe in Oakland, Ca, who are growing a variety of heirloom corn to ensure that their spirits will be GMO free.
